Cheesy Vegan Brussels Sprout Chips

    

The veggie that seldom hits the “Top 10” list of favorite veggies gets a flavorful boost with nutritional yeast adding cheesy flavor!  This vegan recipe crisps the outer leaves of Brussels sprouts in the oven in just 10 minutes for a healthy snack. But don't throw out the sprout innards—they're great for roasting as a side for dinner.”

Ingredients

o    About 15 Brussels sprouts

o    1 tablespoon extra-virgin olive oil

o    1 teaspoon nutritional yeast, or more to taste

o    ¼ teaspoon ground pepper

o    Add other seasonings as you desire – I add garlic powder and sometimes Chili Powder for a kick

o    ⅛ teaspoon salt

Directions

·         Preheat oven to 400°F.

·         Remove enough outer leaves from Brussels sprouts to make 4 cups. Place in a large bowl and add oil, nutritional yeast,  pepper and salt and any other seasonings. With clean hands, gently massage the leaves until coated. Spread in a single layer on a rimmed baking sheet.

·         Roast until the leaves are browned and crispy, about 10 minutes.
