New Twist on a Summer Tradition ~ Green Sangria

I really love sangria in the summer.  It’s a treat on a hot day.  Here is a twist on the traditional sangria – its green and serves up only 115 calories.  By cutting the sugar usually added to sangria it cuts about 50 calories per serving.  The fruit easily makes up for the sugar and adds fiber - don’t forget to snack on the fruit!

For about six servings…

Bottle of Pinot Grigio,
1 oz. Midori melon liqueur
1/2 green apple (cored and sliced)
1/2 lime (sliced)
1/4 English cucumber (sliced)
10 mint leaves
1/2 kiwi fruit (peeled and sliced)
club soda or seltzer or your choice of sparkling mineral water (original or plain)

Combine all ingredients except club soda in a pitcher and refrigerate for a minimum of 2 hours and a maximum of 8 hours. To serve, divide the liquid between 4-6 glasses, leaving room for fruit.  Add a splash of sparkling water to each serving.  It adds a little bubbly kick!   And spoon some of the fruit into each glass.  Serve with a cocktail fork for the fruit.
